For the third year in a row, chef Jesse Morrison-Gauthier makes a January Swine & Dine dinner at The Common, four courses showcasing Alberta pork, all for a wallet-friendly $30. Jesse’s food is inventive and tasty and this menu is no exception — pork tongue and cheek tacos made with bacon fat tortillas, lime, cilantro and pickled onions; a smoked pear and pork sausage salad with creamy braised cabbage followed by crispy pork shoulder on sticky rice with black garlic caramel, congee, crispy shallots and black vinegar.
