We first featured this delicious (and easy) delicata squash recipe as a Christmas holiday dish, but it would be equally amazing as part of a Thanksgiving dinner too. The squash at the markets right now are abundant and beautiful and the mint in your garden may have survived the frost. The pretty shape of the delicata is a bonus, but if you can’t find, try acorn or another yellow/orange winter squash or pumpkin.
