Just had a sneak peek at the menu at SC, chef Shane Chartrand’s new restaurant at the River Cree Resort. We love it. It’s the right proportion of simple and good with a new smoker program, cast iron-cooked salmon and bannock flat breads in the mix. Think straightforward cooking with a focus on delish flavours. The look is modern rustic, with staff in Cam Dobranski’s Medium Rare Chef Apparel, which is local (well, Calgary) and fun — think mechanic’s shirts on the cooks. Opens mid-June, can’t wait.
