Bus was the patriarch of the Fuller family and leaves behind a restaurant legacy that spans 65 years, from the Green and White Drive-In and A&W to the present; Earls, Joey, Cactus Club and Beach House restaurants. Edmontonians love Earl’s, starting with the first on Jasper Avenue. The Earl’s empire now has 66 restaurants in two countries. Bus leaves behind a legacy that exists due to his dedication, hard work and ability to surround himself with great people. He touched the hearts of many and will be forever loved and missed.

six easy ways with pumpkin

This year, why not buy a pumpkin to eat, not just to carve? In her story Falling for Pumpkin, Tracy Anderson talked with Tam Anderson of Prairie Gardens to learn which are the best pumpkins for eating and which are best for carving. One of Tam’s favourite pumpkins to eat is the Grey Ghost, tender, flavourful, grey/blue outside and bright orange inside. She even suggests cooking your pumpkin whole in the embers of a fire. (Be sure to pierce so it doesn’t explode.)

  • Make Tracy’s pumpkin pancakes: thetomato.ca
  • Roast with fall’s bounty—potatoes, carrots, onions, other squashes and peppers. Chop everything in about the same size, drizzle with maple syrup and hot sauce and roast at 400 until soft. Turn a few times for even cooking
  • Toss the seeds (pepitas) with finely-grated parmesan, chopped garlic, black pepper and coarse salt. Roast until crispy, about 5 minutes
  • Chop into bite-sized pieces and roast with sliced onions and fresh thyme. Serve with a crumble of feta and drizzle of lemon juice
  • Make a soup with spicy sausage, pumpkin, kale, onions and carrots, stock, coconut milk and a good curry powder. Or forego the sausage and keep it vegetarian
