Oaxacan On Sunshine, El Cortez
1 oz Mezcal Espadin
1 oz passion fruit shrub (recipe follows)
.5 oz lime juice
.25 oz Aquavit
2 dashes Angostura bitters
1.5 oz Champagne

In a shaker tin, combine all the ingredients, except for the sparkling wine, with one cube of ice. Shake. Add Champagne to the tin and pour over ice into a Collins glass. Garnish with fresh mint and lime.
