the new menu at lux is delux Exec chef Tony Le at Lux Steakhouse debuted the new summer menu last week. The two starters, PEI mussels in a Srirachi and leek-scented broth with grilled sour dough, and the bone marrow tartare, Alberta tenderloin and marrow chopped with dijon mustard, capers, fresh herbs, mellow roasted garlic, crispy shallots for crunch, topped with an egg yolk and served in the bone, were exceptional. Of special note was the crispy snapper shared plate — a whole cornmeal-crusted Pacific snapper served with sliced radishes, avocado, fresh cabbage and crispy chick peas ready to be wrapped up in cool and crunchy iceberg lettuce, accented with a rich salsa verde and a squeeze of fresh lime juice. Not your typical steak house fare. Oh yes, and the Angus rib eye was top-notch.

rhubarb apple betty The rhubarb is perfect right now, ideal for old-timey grandma-style desserts — cobblers, bettys and crumbles, grunts, buckles and slumps —deliciously easy and fast to make. Because grandmas had better things to do than spend a lot of time on dessert. https://thetomato.ca/tomatoquarantwo/recipes/apple-rhubarb-betty |

bubble of the week Vajra NS Delle Neve Rosato NV (Piedmont, Italy) The name is poetic, referring to a chapel in the vineyard called Nostra Signora Della Neve (our lady of the snow). Fragrant with red fruits and white flowers, bone dry, structured enough to serve with light meats and cheeses; a little unusual due to the blend of Nebbiolo and Pinot Noir. The almost five years on lees is apparent in the elegance and depth of flavour. Drink slowly on a gorgeous June evening. We found it at Color de Vino, around $42. |
