easy summer cooking: what to do with new potatoes

New potatoes are one of the many pleasures of summer. They have thin skins, are waxy in texture, high in moisture and are so congenial (they partner well with the other delicious foods of August—tomatoes, corn and green beans). Easy to cook too—steam or lightly boil in salted water or roast on the barbecue. Leave them whole or cut in half or quarter if they are large; when cooked, dice or smash if you like. Russet and Yukon golds are in the market now, we should see the many varieties of fingerlings soon.

Steam until tender and serve with butter, salt and pepper and parsley or dill.
Roast and serve with chevre and lots of fresh thyme and cracked black pepper.
Make a smoky potato salad with paprika, olive oil, sherry vinegar, salt and pepper and chopped scallions.
Make a variation of salade niçoise with salmon instead of tuna.
Cook bacon, drain, and add to a side dish of steamed new potatoes and sautéed green beans.
Spritz with a bit of fresh lemon juice and crack some black pepper over.
