What a night! Edmonton’s Kitchen Party regional qualifier happened last week at the Convention Centre with eight fine, hard-working chefs participating. Chef Bri Campbell (Restaurant May) garnered bronze with an ode to Zsa Zsa the Mangalitsa—root veg Branson pickle served alongside a toothsome heritage pork paté en croute. Winnie Chen (Fu’s Repair Shop) won silver with a comforting dish of daikon and potato congee with duck, pork and century egg rillette. JP Dublado (Red Deer Resort and Casino) topped the podium with a harmonious pairing of sable fish and Hokkaido scallop with local corn miso sauce, enlivened with a calamansi and herb vinaigrette. (He had us at the tiny beet root tartelette holding a bijou sphere of corn and foie gras mousse.) A beautiful and delicious dish. Experience St-Remy’s Signature Cocktail Week at nine select cocktail bars in Edmonton, including the three Central Social Hall locations, Fu’s Repair Shop and Birdog. What’s the deal? Bartenders vie to make the most interesting and delicious drinks featuring St-Remy Signature Brandy. The top bar from each city will be selected by St-Rémy master blender, Cécile Roudaut, with one bar being chosen to create a pop-up in New York City. The pressure is on!

At Central Social Hall enjoy the Cranberry Kiss, created by Amy Ikert, St- Remy with fresh lemon and pineapple, house-made cranberry cordial with a Prosecco float; the Cherry Chai by Brent Jarvis, combines St-Remy, Chambord, and a creamy house chai with vanilla.The Sweater Weather, by Andrew McLaughlin, is a rich confection of St-Remy, crème de cacao, heavy cream, chocolate drizzle and a cinnamon sprinkle.

At Fu’s, the Wasabi Sazerac is a smoky, spicy twist on the classic, complementing the fruity vanilla essence of St-Remy. The Lady on the Moon (a play on the Cantonese dessert, Chinese Black Sesame soup) is topped with a coconut cream foam and a black sesame seed garnish. Love a savoury cocktail. Fu’s House Punch infuses St-Remy with vanilla, a tart cherry-infused Bacardi Superior, saffron and cardamom simple syrup and Dragon Ball Yon Zhen white tea.
