Eau Claire Distillery’s new Saskatoon Honey Gin is similar to a British-style sloe gin. Made with local honey, saskatoon berries, rose hips and Alberta malted barley, along with classic gin botanicals, it is pale pink, silky and smooth. Caitlin Quinn, Eau Claire Distillery’s master distiller, looked to saskatoon berries and honey to create the ideal balance of tart to sweet. Both ingredients capture the flavours found just down the road from the distillery, with Saskatoon berries from The Saskatoon Farm and honey from the Chinook Honey Company. Find it in shops for a limited time, $60. Try it in this sprightly cocktail.
