pumpkin casserole

We are just a little bit covetous of the pumpkin-shaped cast iron casserole, thinking it could be just the thing for fall wedding gifts.
Recipe by Iverson Brownell, courtesy our friends at Le Creuset.

Sweet Potato Filling

6 c mashed sweet potatoes
1 c brown sugar
4 eggs, lightly beaten
1 t vanilla
1 c milk
½ c melted butter

Combine all ingredients and pour into the Le Creuset pumpkin casserole (or a 2-litre oven-safe dish).

Topping

½ c brown sugar
⅓ c flour
⅓ c melted butter
1 c chopped pecans
2 c mini marshmallows

Combine all topping ingredients and spoon over sweet potato filling. Bake at 175°C (350°F) for 30 to 40 minutes, until hot and browned.

Serves 6 to 8
