Edmonton-based chefs Blair Lebsack (Rge Rd) Shane Chartrand (Banff Centre); restaurateurs Sylvia Cheverie (Chartier) Caitlin Fulton (RGE Rd) and Patrick Saurette (The Marc); Elyse Chatterton (Canadian Team, World Butcher Challenge); along with Amanda Cohen (NYC) and Calgary chefs Liana Robberecht and Paul Rogalski join other chefs, food people and food producers for three days of talks, great food and inspiration. Terroir has been a great experience in Toronto; wonderful to see the Symposium come west. Go just to see chef Elizabeth’s Falkner’s film, Sorry We’re Closed on the Pandemic’s disastrous effect on restaurants. Tix: $299+.

Enjoy the Black Box Butcher Battle—35 minutes, four butchers, three proteins. Porkapalooza BBQ teams chat about competition barbecue and cook the sausages.
