Our chef pal Liana Robberecht is creating some really delicious bison recipes with Noble Premium Bison. Here she uses parsnip to bring Prairie flavour to Middle Eastern koftas.

1 package | Noble Premium Bison |
1 c | peeled and grated parsnip |
¼ t | cinnamon |
1 c | chopped walnuts (medium-fine chopped) |
3 T | roasted garlic |
½ c | parsley, finely chopped |
¾ c | fresh mint, finely chopped |
1 t | lemon juice |
1 T | brown sugar |
1 t | ground coriander seed |
1 T | black garlic powder |
1 t | orange zest |
1 t | ground cumin |
2 T | Sambal chili |
1 | whole egg |
1 t | salt |
Preheat oven to 350°F
Soak 20 wooden skewers in water for 15 minutes.
Mix the bison and all ingredients in a large bowl.
Divide the mixture into roughly 20 even balls. mold each ball around the pointed end of each skewer, making an oval kebab that comes to a point. just covering the end of the skewer. Place on a non-stick baking pan and bake for 8-10 minutes.
Yogurt Sauce
1 c | Greek style yogurt |
1 T | roasted garlic puree |
1 t | cumin |
1 T | orange juice |
1 T | extra virgin olive oil |
1 T | honey |
1 dash | tobacco |
2 T | chopped fresh parsley |
Salt |
Mix all ingredients together and serve as a dipping sauce for the koftas.
